HMM 100 Introduction to Hospitality Management Principles and Leadership – 3 Credits
This course provides students with basic knowledge of leadership principles and concepts related to all aspects of the hospitality industry, including lodging, marketing, accounting, event management, food services management, retail, and gaming management, and emphasizes the tracing of the hospitality industry’s growth and 186 developments to present-day and future trends. Students begin an assessment portfolio that is used throughout their years at Virginia Union University.

HMM 102 Introduction to Travel and Tourism – 2 Credits
This course is designed to provide students with the knowledge, principles, and concepts of tourism and travel development and management currently in use, given the world's economic conditions. Practical applications include effectively applying the ideas to the hospitality and tourism industry.

HMM 201 Principles of Food Production/Sanitation and Safety – 4 Credits
This course covers food groups, their nutritional value, preparation methods, presentation, holding, sanitation, safety, and service techniques. Applying scientific and cost principles in preparing various foods will be given attention. Students will also assess potential production problems, especially in sanitation and safety, and how to troubleshoot them.
